By telling the story of Thai cuisine we could write a whole encyclopedia, with still having room for even more unknown parts of traditional Thai cooking.
This masterclass has been created as a space in which we can reflect on what traditional Thai cuisine really means, where it comes from and how it is being executed.
It is a creative space for an experience in which Thai food enthusiasts can move their culinary knowledge close to the core of ancient Thai cooking.
Thai cuisine reflects an incredibly vast field of cultural blends that altogether have shaped a cuisine that is known to be one of the most diverse.
Over centuries neighbouring ethnicities from the north, the west, the east and the south have had their influences on Siamese culinary culture of the old days.
All of those have contributed to a unique pattern of cooking that can only be absorbed if one takes their time to fully immerse themselves into the topic.
The masterclasses are providing the time that it takes, to get an understanding of those historical and cultural roots of traditional Thai cooking.
Based on the development of this knowledge the workshop is highlighting the importance of seasonally available ingredients in such an ancient way of cooking – just reflecting on how local people were living their everyday lives, appreciating what nature has to offer.
Equipped with this understanding it becomes clear for what reasons Thai people have developed certain preparation- and cooking methods in order to achieve the best possible value and the best possible flavours.
It is a way of cooking that is quite contrary to what can be seen in modern day’s Thai food. This new style of “convenience cooking” has moved quite far away from traditional cooking methods which require a significant amount of time and dedication.
Growing up in local Southern Thai communities I have been close to those traditional ways of cooking since I was a child.
While observing modern trends of Thai cooking it has become my aim to highlight those ancient ways of cooking with all their varieties.
In order to prevent those gems of local wisdom from slowly disappearing I am offering this multiple day cooking workshop as a stage for traditional reflections that still combine with culinary creativity – just as it always used to be the case in traditional Thai cooking: a constant development that eventually resulted in this vast culinary diversity.
The masterclass is available in packages of up to 6 days. Whilst dishes from all of Thailand are being executed, the explicit focus is on our local Southern Thai culinary heritage.
